Cabbage (Brassica oleracea var. capitata) can accumulate nitrates under certain conditions. Nitrates are toxic to ruminants and ingestion of foods containing nitrate levels of 1% or above can cause acute poisoning. It is fatal once blood methemoglobin levels rise up to 67–90%.
